Soba

We use pesticide-free buckwheat flour from Akagi Miyama Farm, which does not use any pesticides in its cultivation. We are extremely particular about the most important ingredient in soba, the soba flour. The owner regularly orders soba flour from all over the country personally to ensure that only the most satisfactory soba flour is used. Please enjoy the flavorful and rich taste of our soba.

Ingredients

We use carefully selected pesticide-free buckwheat flour from Mount Akagi in Gunma Prefecture.
The cultivation of soba is carried out in an area at the foot of Mount Akagi, at an altitude of 200 to 800 meters, with well-drained soil deposited with volcanic ash. The flour has a very rich flavor.

Food ingredients

At Jutokuan, we also rigorously manage our soba flour. To preserve the flavor of the soba flour, we manage it in a vacuum environment, ensuring that we can provide it without losing its flavor.

Handmade soba

We use carefully selected buckwheat flour and ensure thorough quality control, hand-making soba noodles every morning. The owner, who trained at a top soba restaurant in Tokyo, provides strict guidance to fully utilize the goodness of the buckwheat flour in noodle-making.

Unagi

At Jutokuan, we source domestic eel 'alive.' Upon receiving an order, we fillet the eel on the spot, generously coat it in our secret sauce, and meticulously grill each one to perfection. This process ensures that we serve tender and flavorful eel with a richly coated sauce.

Filleting

We procure live domestic eels and the owner fillets them carefully upon receiving an order.

Secret sauce

We finish by dipping the eel in a sauce that has been continuously added to for half a century, resulting in a well-aged sweetness and strong flavor

Grilled and steamed

We generously coat them with our secret sauce and carefully grill each one. We adjust the grilling time for each eel based on its condition.

Sake

The owner selects different local sakes every month. We offer about 7 to 8 varieties of local sake from around the country each month.

Yamato Pork

The pork used at Jutokuan is the highly acclaimed 'Yamato pork,' which has been globally recognized. It has a fine texture, is tender, has no strong odor in the lean meat, and has a refined deliciousness. Since 2015, it has been awarded three stars continuously by the ITI (International Taste Institute).

Daisen chicken is a healthy and delicious chicken raised with mineral-rich natural spring water from the forests of Buna in Oita, one of Japan's leading areas. Please enjoy the juicy and flavorful meat with well-balanced fat content.
